Seafood for Dinner

Full of protein and quick to prep, fish and seafood are great choices for easy and flavorful weeknight dinners.

Change it up one night this week with these 5 ideas for preparing it:

1) Salmon
A rich flavorful fish, salmon stands up well to bold spices. Stir garlic powder, chili powder and smoked paprika together with olive oil and rub on both sides of salmon filets. Sear on the stovetop on each side. Serve with roasted red potatoes and Brussels sprouts.

2) Shrimp
Shrimp is versatile, and with its mild flavor, it pairs well with a wide array of flavors and preparations. The base of this bright, lemony dish is orzo, for a change from the usual pasta. Make the orzo and add fresh lemon juice, olive oil and spinach. Then, pan sear the shrimp in olive oil and garlic, with salt, pepper and crushed red pepper. Add some white wine to the pan to create a sauce and serve the shrimp over the orzo.

3) Cod
Dress up mild-flavored cod by making it the highlight of street tacos! Coat pieces of cod in flour seasoned with onion powder, garlic powder and chili powder. Dip in egg and then coat in the flour again. Fry in a pan. Fill warmed corn tortillas with cod, chopped red onion, cilantro, pico de gallo, and chopped avocado. Keep it light by pan frying the cod without the batter!

4) Sea Scallops
Tender, sweet scallops are quick to cook up! To prepare, remove the small side muscle, rinse with cold water and pat dry. Season with salt and pepper, and sear scallops in olive oil for 1 ½ minutes per side. Serve with polenta on a bed of arugula, and top with crumbled bacon.

5) Swordfish
A meaty fish, swordfish is easy to make on a grill pan. Season with salt and pepper. Add fresh or dried herbs and grill in olive oil. For the side, pick up zucchini noodles in the produce department. Sauté zoodles with chopped tomatoes, fresh minced garlic and some crushed red pepper and serve with the fish on top.
