Situated on over 100 acres of land in Sherborn, Mass., Silverwood Organic Farm has been supplying certified organic produce to Brothers Marketplace for three years.
Their fresh, local vegetables are grown using sustainable techniques that are respectful of the environment and that naturally replenish soil nutrients.
This week, try cooking with Silverwood’s garlic scapes. The flower buds of the garlic plant, scapes are removed in late June to allow the plant’s growing energy to focus on thickening up the bulbs.
Chop them up and roast them in the oven with olive oil, salt and pepper, add them to a quick stir-fry, or blend them into this fresh pesto recipe:
Garlic Scape Pesto
10 large garlic scapes
1/3 cup unsalted pistachios
1/3 cup finely grated Parmigiano Reggiano
1/2 tsp salt
1/4 tsp pepper
1/3 cup extra virgin olive oil
Puree garlic scapes, pistachios, cheese, salt and pepper in a food processor until finely chopped. With the motor running, slowly pour in the oil. Season with salt and pepper to taste. Pesto keeps in the fridge, covered, for 1 week or frozen for a month.
In the produce section, look for other fresh produce from Silverwood. For a bright summer side dish, sauté chopped zucchini and squash and stir in fresh basil leaves. Serve over rice or pasta, or offer as a side dish with grilled chicken or fish. Add Silverwood’s fennel to your summer salads or roast it with fresh herbs. Or chop up chard and mix it with minced garlic, shallots, lemon juice, red wine vinegar and finely ground nuts as a topping for chicken or seafood.
