Hearty Spring Salads

Build a hearty salad that will satisfy your hunger with new flavors, extra crunch and protein-packed ingredients.

Here is our guide to making satisfying summer salads for lunch, dinner or a crowd:

The Greens

Start with a bowl full of fresh, crisp, leafy greens. From crunchy romaine and mesclun mix to baby arugula and kale, the options for greens in the produce department are many. Change up your usual salad with local, hydroponic greens from FreshBox Farms in Millis or Little Leaf Farms in Devens. Instead of — or in addition to — greens, use grains for your salad base. Consider quinoa, lentils or wild rice as choices. Our new Brothers Marketplace Beans & Grains are all-natural, packed locally, and add plant-based nutrients and new flavors to your home cooking.

Make It Colorful With Veggies

Vegetables add variety, flavor, and texture to a plain bowl of greens! Along with usual standbys such as cherry tomatoes, cucumbers and peppers, add sugar snap peas, corn, shaved Brussels sprouts or radishes, baby beets, or spring onions. Toss in fresh herbs for a hint of earthy flavor, such as thyme, basil or tarragon, or blend a mix of several.

A Hint of Sweetness

A little sweet addition goes a long way in a big, hearty salad. Berries, peaches, apples and pears all add natural fruit flavor to salads. Try dried cranberries, blueberries or figs for a quick and easy add-on. Caramelizing onions bring out their sweetness and matches well with all sorts of greens and cheeses.

Add A Little Crunch

Add texture and crunch with nuts and seeds. The menu of nut options is nearly endless: walnuts, pecans, almonds, pistachios and more. Toast lightly in a pan for deeper flavor. For seeds, consider hemp, pumpkin, sunflower, sesame or even pomegranate seeds for added sweetness.

Balance It Out

Balance out the many flavors in your hearty salad with something smooth and creamy. For veggies, roasted beets, squash or sweet potatoes. Mix in slices of avocado or a dollop of hummus for a smooth creaminess. Top it all of with a little cheese, from Narragansett Creamery’s Salty Sea Feta to our own homemade mozzarella to fresh, shaved Parmesan. Or if you’re looking for a dairy free cheese substitute sprinkle with nutritional yeast.

Top It Off With Proteins

Warm protein quickly turns a big salad into a complete meal. Select from grilled chicken, marinated steak tips, sautéed shrimp, pan-seared salmon and more. Add Brothers Marketplace’s own hand-crafted, artisanal charcuterie meats from New England Charcuterie in Waltham. Or keep it cool and vegetarian with beans, such as black beans, cannellini beans or chickpeas, or edamame for a protein boost.

Dress It Up

Making your own dressing is easier than you might think. For homemade balsamic vinaigrette, combine Brothers Marketplace aged balsamic vinegar and extra virgin olive oil, Dijon mustard, plus salt and pepper to taste. For homemade creamy tahini dressing, combine Brothers Marketplace extra virgin olive oil, tahini, lemon juice, Dijon mustard, local honey, plus salt and pepper to taste. Or make you own using our vinaigrette guide. And if you don’t have time to make your own, we have plenty of salad dressing options.
