Curried Chicken Salad


  • 4 Tbsp Brothers Marketplace Curry
  • 3 split chicken breasts (on bone with skin) approximately 2-2 ½ lbs
  • 2 tbsp Brothers Marketplace Organic EVOO
  • 1 tsp salt, divided
  • ½ tsp black pepper
  • 1 cup mayonnaise
  • ¼ cup currants (raisins can be substituted)
  • ¼ cup peanuts
  • 1 bunch scallions, finely sliced (pale green and white portions only)


  • Preheat oven to 375 degrees. Line baking sheet tray with parchment paper
  • Place chicken breasts on the lined pan. Rub with Brothers Marketplace EVOO and ½ tsp salt & pepper
  • Bake for 20-25 minutes, or until internal temperature reaches 165 degrees
  • In a large bowl, whisk together the mayonnaise and Brothers Marketplace Curry. Stir in currants, peanuts, and scallions.
  • Remove skin and bones from chicken. Cut into small cubes and toss with the curry mayonnaise
