Happy Cinco de Mayo!

It’s officially May and, this year, we are celebrating Cinco de Mayo at home. Celebrate with friends and family in true social distancing fashion by shopping for the same list of items and enjoying them together on a video chat. Here are our suggestions:

Enjoy an array of chips and dips: Everyone likes chips and dips, especially on Cinco de Mayo. From fresh guacamole and salsa to mouthwatering 7 layer dip and more, Our Kitchen has your favorite Mexican-style dips covered. Or pick up fresh avocados, plum tomatoes, onions, and cilantro to make your own.

Don’t forget the chips! Try locally made Mi Nina All-Natural Tortilla Chips, or take it up a notch with our homemade chips.

Set up a make-your-own taco bar: Make tacos multiple ways with a taco bar. Serve up pulled chicken made with our Chipotle Paprika Rub, fresh tilapia or cod coated in our Blackening Rub, and Certified Angus Beef ® brand Natural ground beef sourced by Niman Ranch. For toppings, there are many options, including fresh guacamole, sliced jalapeño, shredded cheese and lettuce, corn, diced onions and more. Make a mixture of hard and soft shell tacos for even more variety.

Spice up your salads: Grab a prepared Cuban Black Bean Salad from Our Kitchen or make your own with chopped peppers, onions, cilantro, and lime. Try a spicy corn salad with corn with paprika, cayenne, lime juice and some mayonnaise. Or turn the taco bar into a taco salad bar with extra greens and veggies.

Then grab your favorite beer or mix up a margarita and have a fun Cinco de Mayo celebration!

Beyond Basic: Chicken

The right combination of herbs and spices can take an otherwise plain meat like chicken and elevate it into a mouthwatering and healthy dish.

Bell & Evans has been providing the highest quality, naturally-raised poultry to upscale markets on the East coast, like Brothers Marketplace, since 1890. An old fashioned, family-owned company that believes in both clean ingredients and the humane treatment of their poultry.

Their chickens are never given antibiotics or growth hormones, fed a 100% vegetarian diet and never animal by-products, bakery goods or brewery grains, and are humanely raised and compassionately handled throughout their lives. Plus, their chicken is 100% air-chilled, meaning there is no retained water and no added water, yielding a tender, more flavorful chicken.

Here are some of our favorite ways to take your healthy meals up a notch:

Create a mouthwatering meal with new and exciting flavors by experimenting with Brothers Marketplace Spices & Rubs to make Berbere Chicken with Ethiopian Lentils, Baharat Roasted Chicken, or Curried Chicken Salad.

Make your own marinade using Hot, Cranberry Apple Cider, or Riesling vinegar from American Vinegar Works.  Made, aged and bottled in Lowell, MA using craft American ciders, wines, and brews, these vinegars will transform your cooking and cocktails. Naturally fermented and never filtered, they combine traditional production methods from the 1800’s and top of the line ingredients to deliver novel complex flavors. Discover your favorite combination for marinating chicken when you try this recipe.

Or go with something more traditional and marinate boneless chicken breasts overnight in Brothers Marketplace Extra Virgin Olive Oil, our No-Salt Lemon Pepper and a blend of your favorite fresh herbs, and then toss them on the grill. Serve with sautéed kale, or on top of a mixed green salad.

Find all of the ingredients you need for these recipes at your local Brothers Marketplace. Enjoy!

Plant-Based Cooking With Our Own Beans & Grains

Make all-natural beans, rice, and grains part of your kitchen with Brothers Marketplace Beans & Grains.

Packed locally, these new additions to our shelves add plant-based nutrients and new flavors to your home cooking.

Here is our primer on what’s available and some great ways to enjoy them:

Nutty, buttery Garbanzo Beans, also known as chickpeas, become smooth, creamy hummus with lemon, olive oil, salt, garlic and tahini. Or roast them in the oven with spices for a high-nutrient snack.

Add silky Cannellini Beans to salads, soups, and stews, or turn them into a protein-packed dip for crackers or veggies.

One helpful tip: soaking beans overnight reduces the cooking time and disperses some of the compounds that can cause gas.

Split Peas, the dried, peeled, and split seeds of peas, are best known for the soup by the same name. A light, green Split Pea Soup with bacon crumbles makes a beautiful spring appetizer. You can also turn them into a variation on hummus or add them to salads and falafel.

Lentils come in all sorts of varieties and a wide array of colors. The most common variety, Brown Lentils bring an earthy, mild flavor. They take only 20-30 minutes to cook and hold their shape nicely in soups, curries, and other side dishes.

Petite French Lentils, also known as Puy lentils, are green in color and offer a robust, slightly peppery flavor. Ready in 25 minutes, they keep a firm texture that makes them ready for salads and other side dishes.

Black Lentils are protein packed and versatile. Spice them with cumin and add a dollop of yogurt and some fresh mint leaves for a Mediterranean–inspired side dish. Or braise them on the stove with chopped onions, carrots, celery and fresh thyme.

Sweet, nutty, Crimson Lentils fall in the mid-range for cooking time at around 30 minutes. They tend to get mushy when cooked, which makes them a great base for Indian dals – with flavors of red chili, coriander, cumin, turmeric and ginger – curry dishes, and Middle Eastern-style lentil soup.

If you prefer a blend, add the Autumn Lentil Blend in warm fall colors to soups, stews and sides. Mix them into a side dish with sweet potatoes and spinach.

In addition to nutrient-rich, nutty staples like short and long grain brown rice, try our Wild Rice Blend, as a side dish for fish or chicken. Add dried cranberries, pecans, and a blend of dried herbs.

With the same whole-grain benefits as brown rice, Himalayan Red Rice has a more complex, nuttier, earthy flavor. Enjoy it in salads and pilaf. Try it with thyme and mushrooms or tart cherries.

Chinese Black Rice is also known as Emperor’s Rice or forbidden rice. It was previously reserved only for the Chinese emperor due to its superior health benefits and high level of antioxidants, and therefore a “forbidden” food for everyone else. Add crunchy almonds and chopped onions to this rich, sweet rice and serve with seafood. Or use it as a base for a Thai salad with mangos and cilantro.

For creamy risottos of all sorts, select Arborio Rice, which releases starches when liquid is added slowly, for that rich risotto texture.

Other Grains
Quinoa is a complete, gluten-free protein that functions like a grain but is actually a seed. It takes less time to cook than many other grains, just 10 to 15 minutes. Rinse it before cooking to remove any bitterness.

Use it as a side dish for tacos, in stuffed peppers, or as a replacement for pasta in a salad.

In addition to the usual white variety, try Red Quinoa. Rich in taste, a little chewy and a bit nuttier, red quinoa works well in cold salads.

Fluffy, crunchy, Tricolor Quinoa is a blend of white, black and red quinoa, making for a bright side dish or base for a chicken or shrimp dish.

Also known as pearl couscous, Giant Israeli Couscous, is made from wheat flour. Toss with vinaigrette, feta, chopped cucumbers, and mint for a fresh salad. Turn it into a spicy main course with crushed red pepper, pan-seared chicken, and fresh herbs.

Fine Bulgur Wheat is made of hulled winter wheat berries that are then processed to remove some of the bran. Then they are steamed, dried, and finely cracked. It’s the base of Middle-Eastern tabbouleh, with chopped parsley, tomatoes, mint, and onion, and seasoned with olive oil, lemon juice, salt, and pepper. For a different variation, make it into a summer salad with zucchini, summer squash and basil.

Our grain selection also includes two types of Chia Seeds, white and black. A great source of heart-healthy omega-3s, chia seeds can be mixed with coconut milk for a creamy pudding — ready in time for tomorrow’s breakfast — added to muffins, or blended into smoothies.

Easter and Passover Celebrations

Although your gathering may be a bit smaller this year, we’re getting ready to celebrate Easter and Passover the traditional way.

For Easter, whip up a glaze for a Niman Ranch Spiral Cut Ham. All Niman Ranch meats are antibiotic and hormone free, humanely and sustainably raised by small family farmers and ranchers. Go spicy with chipotle and orange, or sweet with brown sugar and honey. Serve your ham with our braised kale or au gratin potato towers and curried cauliflower.

Or, roast a boneless leg of lamb. Shepherd’s Pride lamb is antibiotic and hormone free, and raised in the US by family ranchers on natural grasses, herbs and flowers, topped off with nutrient-rich grain. All of this lamb can be traced to where it was raised and who handled it.

Marinate the leg of lamb overnight in a blend of Greek yogurt, fresh herbs, lemon and garlic. Add more fresh herbs and olive oil before roasting. Pair your lamb with roasted Brussels sprouts or a grilled vegetable medley, fresh from our kitchen.

Add to your Easter entrée options with a Brothers Marketplace Lasagna, prepared with our store-made sweet Italian sausage. Or Eggplant Parmesan, with fresh cut eggplant, hand-breaded and lightly fried, layered with provolone, mozzarella, and topped with our signature marinara sauce – a great vegetarian option! Find our Easter Menu here.

Host a brunch for the holiday, featuring fresh spring salads and quiches, such as broccoli & cheese, spinach & tomato, ham & cheese, or Quiche Lorraine. Add fresh fruit skewers to the spread. Plus, set up a make your own bagel bar with One Mighty Mill Bagels and your favorite toppings.

For your Passover seder, find a wide array of entrees from our kitchen, prepared how you would make them if you had the time.* Pair traditional, slow-roasted brisket, with an updated chicken dish, such as our secret recipe Mahogany Chicken with chopped figs and Craisins. Or order a complete Roast Brisket or Plainville Turkey Dinner in advance, complete with salad, Matzo Ball Soup, chopped liver, side dishes and dessert. View our Passover menu here. Place your order by Monday, March 30th for pick-up on Wednesday, April 8th.

Whatever you are celebrating this spring, our associates are available to help you find what you need. Happy Easter and Happy Passover!

Spring Cheeses

Creamy and sweet. Spicy and firm. Earthy, fruity or sharp.

How do you say cheese? At our Cheese Shop, find a wide selection of artisan cheeses, including many that are handmade in New England.

This spring, stop by to select an array of local cheeses for a festive and personalized cheese board.

When creating a cheese board, think about a mix of flavors and textures. Try cheeses from different categories – soft or firm, goat’s milk or cow’s milk, sweet or spicy – and make a board with your favorites.

The goat cheese from Vermont Creamery is made with fresh goats’ milk from family farms that is turned naturally into curds overnight, drained and then shaped into logs. Or from Maine, try the Seal Cove farm chevre, crafted in the farmstead tradition, using only the high-quality milk produced from goats living on their farm.

For something pungent, select a blue cheese, such as the raw milk blue cheese handmade in the turn-of-the-century barn at Great Hill Creamery in Marlon, Mass. Unlike many blue cheese varieties, the milk is not homogenized, which means the cheese is especially smooth and fully flavored. The curd is a bit more dense and yellow than most blue cheeses because there is no bleach or food coloring added.

Go sharp with Cabot’s classic sharp cheddar, with its slight sweetness complemented by a rich, buttery tang. Or choose a cheddar from Shelburne Farms or Grafton Village, also in Vermont.

For a less traditional addition and some saltiness, add a small bowl of Salty Sea Feta from Narragansett Creamery, crafted from whole milk and sea salt. Or select a firm and flaky Maple Sriracha WindsorDale from Vermont Farmstead, hot and tangy with a touch of sweetness. It’s also a great topper for grilled chicken!

For crackers, try light and crispy Brothers Marketplace Oil and Sea Salt Crackers or gluten-free Onesto Crackers. Include some delicious charcuterie and smoked salmon and bluefish plates from Boston Smoked Fish. And add a sweet spread from Dove & Figs, in Evil Apple or Chocolate Fig Sunshine, and dried fruit from Woodstock in Providence, RI.

Pairing with a specific wine or beer, or entertaining a guest with particular taste? Our cheese shop associates are happy to help, just ask.
