We roll them by hand the traditional way with freshly ground beef, parmesan cheese, and bread crumbs, and then we season them with parsley, salt and pepper.

For a finishing touch, freshly grate Parmigiano-Reggiano cheese, imported from the province Reggio Emilia, Italy, and stir it into your pasta. This hard, granular, cow’s milk cheese adds a sharp, umami flavor to the dish, due to the high concentration of naturally occurring glutamates.

If you’re making your own sauces at home, or want to dress grilled vegetables or a Caprese salad, try Compagnia SanRemo’s Olive Oil & Vinegar. The fifth-generation producer of this oil has been making extra virgin olive oil since 1905, with all Italian olives crushed in Italy. Their aged balsamic vinegar is created by selecting the highest quality aged balsamic “must,” freshly pressed grape juice that is aged for at least three years.
